How to play againest AI's

I was told you could play with AI Npc countries in the default world map is this true?
and if so how do i play it?

Untrue. Due to the free movement of units, no AI is likely to be developed.

You can't have an active enemy computer player if that's what you mean.The closest to that is playing alone against neutrals.If that's what you want to do then just start any game at any default map alone and have fun.But know that you can't win.
